Pumpkin Scones

I picked this recipe up in South Africa at a cafe in the little Western Cape town of Franschoek. They are soooo good .. so if you are a scone maker ... please try them.

¼ Pumpkin (approx) peeled and cut into 1 cm cubes 15gm white sugar
ground cinnamon a  pinch salt
sugar 125gm butter
olive oil 2 eggs
juice of 1 orange 125gm milk
550gm standard flour 60 ml cream
25gm baking powder  

Preheat the oven to 200 c.
Toss the pumpkin with a little cinnamon, sugar and olive oil, and sprinkle with orange juice. Roast until the pumpkin is tender. Set aside to cool.
Preheat oven to 180 c.
Mix flour, baking powder, sugar and salt. Rub the butter into the mix then add the eggs and mix well.
Slowly and gently add the milk and cream to the mixture, then the roast pumpkin cubes.
Roll dough to 1.5 cm deep and cut into scones and bake for 20 mins
16 scones.
